Honey of an Idea


Processed ham and turkey with a hint of honey are crowding the shelves in delis and supermarkets nationwide, with more than 85 varieties to choose from. But the honey adds more than country flavor-research suggests it may also help prevent off-flavors, retain moisture, and keep bacterial levels down. This makes honey a perfect partner for low-fat meats, which typically have a shorter shelf life (and less natural flavor) than full-fat varieties. More sweet news: Honeyed meats have about the same calories as their plain counterparts.
